What "From Scratch" Means and Why It’s Comfort Food

It's easy to say from scratch. At Victoria, it means almost every component you taste has been made by our kitchen team, in our kitchen, that day. The sauces that finish your pasta, the café de paris sauce with your steak, the chili oil giving your mussels their heat. All of it was built by hand, that's what comfort food in Bangkok should feel like. If you’re seated on our terrace, it’s one of the quieter corners Bangkok has to offer.



Beurre Blanc: The Classic French Sauce Done Right


Our beurre blanc is made fresh in-house and served with two of our most loved dishes: the Salmon Beurre Blanc and our Clams à la Française. A classic French butter sauce made by slow cooking fresh onions with white wine and fresh herbs. Then carefully mixed, strained and reduced to half of its weight. Finished by adding salt, cold fresh butter and lemon. Sounds simple, but demands precision and patience to get right every time. The result is silky, rich, and unmistakably something from a French brasserie. This is comfort food Bangkok doesn't see often. 



Chili Oil from Scratch: One Recipe, Many Purposes


Our house chili oil is made from scratch in the Victoria kitchen and quietly appears across more of the menu than you might expect. It brings the heat to our Spicy Mussels, forms the backbone of our Arrabbiata sauce and Spicy Prawn Pasta, and is used as a finishing touch on other dishes where we want a gentle, slow-building kick. One recipe but its purpose can be used across many dishes. Maximizing flavour & Minimizing food waste. 


Tomato Sauce: A strong base made from scratch


Great tomato sauce takes time. Ours starts from a single slow-cooked base and branches into other dishes depending on what goes in next. Linguine Amatriciana: smoky, rich, with guanciale and a sharp, cheesy finish. Arrabbiata Seafood: punchy, spiced with our house chili oil and chili flakes, unapologetically bold. Mediterranean Penne: lighter, aromatic, and clean. Three different plates of comfort food. Our tomato sauce can be found in even more dishes, make sure to check our entire menu to find out! 



Café de Paris: Victoria's Most Renowned Signature Sauce


If there's one thing on our menu that best represents what from-scratch cooking means to us, it's our Café de Paris sauce. Made entirely fresh by our kitchen team, this classic Swiss-French compound butter is built from a long list of herbs, spices, and aromatics. A recipe that takes real time and real attention to produce properly. 


It is served with our Ribeye and Tenderloin Café de Paris. Prepared carefully and served hot as a bedding for your steak of choice. Finishing the dish with every herb and spice working together at once. 


We also produce an adapted version for our monthly rotating Café de Paris dish. Currently rotating three options: Kefta Beef (July), Smash Burger (August), and last month we just had the Salmon steak. Same standard. Same care. Just a different cut each month.

It is one of the most popular things on the menu, and one of the most time-consuming to make. That's exactly why we keep doing it.
