The head of our pastry team


Meet chef Anna Fitting, our groups’ Executive Pastry Chef. Straight from the big apple New York city to Bangkok. With over 15 years of experience whipping up tasteful sweet treats, Anna is a true culinary artist. Her passion for crafting delicious and beautiful desserts is boundless. Mastering both classic Western techniques and creating innovative Asian-Western fusions to keep things exciting.


Anna is more than just a dessert guru; she’s a champion for her team, fostering a positive and collaborative work environment. She believes in empowering others to learn and grow, creating a kitchen filled with creativity and great vibes. Her absolute favorite dessert at Victoria is the Apple tart because it is a classic that will never fail you. The crispy puff pastry and soft layers of caramelized apples melt in your mouth. We serve it together with our delicious homemade ice cream. With such a talent leading our pastry team, it’s no wonder people keep coming back for more!



Our Bakery Team’s and their passion for Quality.


The mastermind behind our bakery team is Head Pastry Chef Nuttapon Insitti (Nut), a well-seasoned professional with a fiery passion for the craft of breadmaking. Originally holding an Arts Degree in Product Design, Nut’s love for bread ultimately led him down a different path — one that now defines his career. With an impressive track record at prestigious hotels including Rosewood, Four Seasons, Hilton, Waldorf-Astoria, Pullman, and more, he has honed his skills to perfection, mastering both traditional techniques and innovative approaches.


The entire HMA Group counts on Nut and his team for our daily selection of homemade breads and pasta, from crusty baguettes and rustic sourdough to delicate handmade ravioli and perfectly rolled tagliolini. Every morning, he arrives before dawn, ready to work his magic with flour, yeast, and patience. His meticulous attention to detail ensures that each loaf is golden, fragrant, and irresistible.


Beyond his technical mastery, Nut is deeply committed to mentoring his bakery team, fostering an environment of learning, precision, and pride in their craft. His personal favorites include our multigrain sourdough, which combines a hearty, nutty flavor with a perfectly chewy crumb, and our signature baguette — he has a particular love for all French-style breads. Under his guidance, the bakery has become an integral part of HMA’s identity, serving bread that is more than just a side; it is a signature experience. 



The creative master behind our Pastry


Last, but definitely not least, is our charismatic Pastry Sous Chef, Mewadee Nukatrum (Aey). The creative with “magic fingers” behind so many of HMA’s signature desserts. Working closely alongside Chef Anna, Chef Aey plays a vital role in bringing our sweet creations to life. With over 10 years of experience as a Pastry Arts Chef, her expertise spans from fine dining to casual brasserie, and she’s honed her craft in renowned establishments such as Rico’s, Brasserie 9, Babyccino, and M Krub.


Her passion lies not only in making desserts taste divine, but also in ensuring they look like works of art. Further known for her meticulous plating skills, she has a natural flair for turning every dish into a picture-worthy masterpiece without compromising on flavor. Whether it’s a classic French tart or an innovative fusion creation, Chef Aey approaches each dessert with boundless creativity and precision. Together, Anna and Aey form an unstoppable duo, leading a pastry kitchen filled with innovation, dedication, and heart. Alongside Nut and the bakery team, they make sure that every guest at Victoria, Mozza, and Cocotte enjoys desserts and breads crafted to the highest standard. Fresh, flavorful, and simply unforgettable.

From crispy, nutty multigrain sourdough – left to rise slowly for up to 24 hours to develop its rich depth of flavor – to soft, milky Shokupan, golden brioche burger buns, airy focaccia, and rustic baguettes, our bakery team can do it all. Every loaf is made with care, ensuring high quality, texture, and the unmistakable taste of love and passion for the craft.


Every day, the bakery transforms into a pasta workshop, rolling and cutting fresh tagliolini and pappardelle with precision. Made with high-quality eggs and flour, our pasta captures the true essence of artisanal craft, boasting the perfect bite – tender yet firm. It’s not just bread and pasta: our bakery team also churns our homemade ice cream in four irresistible flavors. Each flavor is crafted in small batches to ensure maximum freshness and creamy perfection, making it the ideal finishing touch to any meal and dessert. Whether it’s bread, pasta, or ice cream, every creation from our bakery is a testament to the skill, dedication, and heart of our team.



Victoria’s Signature Pastry & Desserts


The truth is, all of Victoria’s pastries and desserts we make entirely from scratch, right here in our Pastry kitchen. Under the expert hands of Chef Anna and Chef Aey, every creation begins with the finest ingredients. Using creamy butter, rich high quality chocolate, fragrant Madagascar vanilla, and the freshest local produce.


One of our proudest staples is the classic choux pastry. We use it for our signature profiteroles and Paris Brest. Light, airy, and subtly nutty, it’s crafted to perfectly complement silky hazelnut cream or a scoop of our homemade ice cream. Another guest favorite is our Apple Tart, with its perfectly crisp puff pastry and soft caramelized apples. A dessert that truly feels made with care and love, warm and sweet in every bite.


Every day, the pastry team offers you an array of fresh desserts: smooth and velvety crème brûlée with its caramelized sugar crust, bright and zesty lemon tart, delicate coconut panna cotta, and rich, molten chocolate lava cake. For breakfast, there’s our homemade granola, a crunchy mix of oats, nuts, and longan honey baked to perfection. Begin the day with fluffy pancakes to start your morning right. The afternoon tea is made extra special with macarons, scones, brownies, and other treats, each plated with artistry and attention to detail.
