The Dinner Classic: Café de Paris and It’s History.


The café de Paris is a complex herb butter sauce with a rich history. Popularised in the 1930s by the Café de Paris restaurant in Geneva, Switzerland. The restaurant originally served the butter-sauce with grilled beef. Most likely with an entrecôte or sirloin steak. The entrecôte Café de Paris remains their speciality to this day. 


Although every restaurant has their own secret recipe. Every sauce contains similar ingredients such as liver, butter, thyme, cream, mustard, curry powder, worcestershire sauce and so much more. The sauce combines rich, savory flavors with subtle spice and lemon zest, creating its signature umami taste.

In the past, we've paired our signature Café de Paris sauce with premium beef cuts. For example, we've featured high-marbling ribeye, hanger steak, and striploin. Each cut was carefully chosen to complement our house-made sauce. However, this season we're taking things even further. Let us take you on a flavorful adventure through three new exclusive monthly specials.


June: The Tiger Prawn Café de Paris

This seafood twist on the classic is perfect for summer. Our plump, juicy tiger prawns are grilled to perfection and topped with a bell pepper confit. Served on a bed of the rich, herbaceous Café de Paris sauce. This creates a bold surf-style combination that’s both indulgent and refreshing.


To make your dining experience complete we’ve paired it with a wine that perfectly complements this dish: CROZES-HERMITAGE AOC “PETIT RUCHE” M. Chapoutier 2022 – Marsanne, Rhône Valley, France. This white wine brings floral aromas, citrus notes, and hints of honey and white peach. The wine's acidity balances the buttery sauce, and its stonefruit notes enhance the prawn's natural sweetness.


July: Lamb Rack Café de Paris 


For July, we welcome the Lamb Rack Café de Paris. Bold flavors & exceptional tenderness are promised! We source our lamb from from a coastal farm in New Zealand, where the animals graze on a diet of rye, clover, and herbs, enriched by a salty sea breezes. This results in naturally seasoned and beautifully marbled lamb with a deep complexity of our Café de Paris sauce. Not only is this meat premium in taste, but it’s also ethically and sustainably sourced.


Great flavor, great conscience! To make your evening even greater we have another great wine pairing. This month we offer a special price on the red wine: CROZES-HERMITAGE AOC “PETITE RUCHE” M. CHAPOUTIER 2023 – Syrah, Rhône Valley, France. This wine is aromatic and vibrant, this Syrah offers notes of blackberry, violet, black pepper with a smooth, silky structure. That structure enhances the lamb’s rich texture. 



August: Surf & Turf Café de Paris 


To close the season, last but not least, we offer the ultimate indulgence: The Surf & Turf Café de Paris. A pairing of a juicy, high-grade beef and a buttery Canadian lobster. Our experts paired this delicious treat with another great red wine. SAINT-ÉMILION GRAND CRU AOC CHÂTEAU DU BARRY 2022 – Merlot, Cabernet Sauvignon, Malbec – Bordeaux, France. 


This full-bodied red boasts rich blackberry, plum, and cacao notes, with smooth tannins and subtle spice. It enhances both the grilled beef and the sweetness of the lobster, offering depth and structured without overpowering the dish.
